Pulled Pork Pizza - Non Filipino Recipe

- 1 tablespoon olive oil
- 1 clove garlic, finely minced
- 2 tablespoons finely minced onion
- 3/4 cup ketchup
- 2 teaspoons Worcestershire sauce
- 1/3 cup cider vinegar
- 2 tablespoons brown sugar, packed, light or dark
- dash salt
- 1/8 teaspoon ground black pepper
- dash cayenne pepper
- Toppings:
- thinly sliced plum tomatoes
- 1 cup chopped leftover pulled pork
- 1/2 to 3/4 cup thinly sliced red onion
- 1/2 cup thinly sliced peppers
- sliced black olives or jalapeno peppers, optional
- 4 ounces shredded Mozzarella cheese
- 2 to 4 ounces shredded mild Cheddar or a combination of Cheddar and Monterey Jack cheeses
Preparation:
- In a saucepan over medium heat, saute onion in olive oil until tender. Add garlic and cook for 1 minute longer. Add the ketchup, Worcestershire sauce, vinegar, brown sugar, salt, and black and cayenne peppers. Bring to a simmer; reduce heat to low and cook, stirring frequently, until thickened.
- Meanwhile, prepare the pizza crust by hand or in the bread machine. Fit the crust in a regular or deep dish pizza pan.
- Spread about 1/2 cup of the sauce over the crust. Top with the pulled pork, tomatoes, onion, bell pepper, and other toppings. Sprinkle the cheeses over all.
- Bake pizza at 425° for about 20 minutes or until crust is lightly browned, or follow the directions for your particular pizza crust recipe and method. Makes a 12- to 14-inch pizza.
