Pork Hamon - Pinoy Food

Pork Hamon is simply ham (from the spanish word jamon). This is usually served in the Pinoy dining tables during breakfast and occasions. This Pinoy food is a little bit similar to Pork Morcon This Pinoy food is one of the most popular food during Christmas. It is usually served in Noche Buena where the Pinoy families are gathering together to celebrate Christmas. Inregients: 1 leg of pork (approx. 4-5 lbs) Curing solution (brown sugar, cup rock salt, saltpeter(salitre) Procedure: Wash thoroughly to remove blood. Make 2-3 slices in the thick portion of meat and hang to drip. Prepare curing solution (for every kilo of meat): 1/3 cup brown sugar 1 cup rock salt 1/2 tsp saltpeter (salitre) Mix ingredients thoroughly and divide into 3 parts. Rub one part of the mixture on the meat and place in a curing vessel. (Use nonmetal container). Leave for 2 days in a cool place or refrigerator. Igado - Pinoy Food

Ilocanos are known for their own version of the Pinoy food Menudo . They called their own version of their Menudo as Igado. This pinoy food recipe became popular all over the country because of its unique style. Below is the recipe for the Pinoy food Igado. Ingredients: 500g. pork, thinly sliced (kasim or pigue) 150g. liver, thinly sliced 1/4 k. heart and kidney, slice thinly, if available 1 tbsp. vinegar ¼ cup soy sauce ¼ cup crushed garlic 2 tbsp. cooking oil 2 tbsp. chopped garlic 1 large onion, chopped 1 tomato, chopped 1 medium red bell pepper, cubed 1 medium green bell pepper, cubed ½ cup green peas 2 8g. MAGGI MAGIC SARAP 1½ tsp. peppercorns Procedure: Marinate pork, heart, kidney and liver slices in combined vinegar, soy sauce and garlic for at least 30 minutes. Heat oil and sauté chopped garlic, onion and tomatoes until wilted. Stir in marinated meat and bring to a boil without stirring.
