14 oz. / 400 g beef
1 chili pepper, sliced
1 stalk scallion, cut into sections
1 slice ginger, cut into sections
1 tbsp. Szechuan peppercorns
1 tbsp. light soy sauce
1 tbsp. Chinese cooing wine
1 tbsp. sugar, or to taste
1 tbsp. salt, or to taste
1. Bring a large pot of water into boil, then stew the beef for 5-10 minutes, drain well.
2. Add the beef into the wok, pour into enough water to cover, add all the ingredients, stew over high heat for 30 minutes.
3. Then reduce heat to low and stew for another 2 hours.
4. Remove the beef from the wok, slice into thin, sprinkle with your favorite seasoning, then serve on a plate.
