Pinkabet Recipe by Filipino Cooking - Filipino Free Recipes

Pinakbet or pakbet tagalog is originally ilocano recipes mix of local vegetables and pork with bagoong alamang.

 1/4 kilo pork diced
 2 eggplant cut in bite size
 1 ampalaya (bittermelon) cut in bite size      
 5 pieces okra cut into half
 1/4 kalabasa(squash) cut into cubes
 2 tbsp. bagoong alamang or shrimp paste
 1 bundle sitaw (string beans)
 1 small tomato diced
 1 small onion chopped
 3 cloves garlic chopped
 1/2 cup water
salt and pepper to taste
Pinakbet Cooking Instructions:

Heat cooking oil in a wok. Add in pork and fry until light brown.

In the same pan, saute garlic, onion until fragrant. Add in tomatoes and stir together for a few minutes. Season with shrimp paste according to taste and stir until well combined.

Pour in 1/2 cup of water. Then add the squash. Simmer over medium heat for about 10 minutes or until squash is half cooked.

Add Ampalaya or bitter melon, eggplant, okra and Sitaw. Mix together. Simmer and cover, until vegetables, are tender. Salt and pepper to taste.

Serve with fried fish and rice.
