Pork Tocino – Pinoy Food Recipe


I’ve been searching for the recipe for this Pinoy food. And now, I’ve found it. My friend told me that Pork Tocino is not good because it has preservatives. But I keep on eating eat because it’s delicious. I hope this recipe will be the solution on that preservative problem that we encounter in Pork Tocino. Pork Tocino is popular throughout the country. It was usually served during morning with rice as heavy breakfast to energize you throughout the day. Some workers and students prefer to eat this Pinoy Food in Karinderias (Food Chains) before going to work or school. This is usually perfect when partnered with Sinangag (Friend Rice) and Sliced tomato as edible garnishing. We sometimes dip it to vinegar with smashed garlic. Here’s the recipe:

Ingredients:
2 lbs. of pork/pork chops or red loin with fat, sliced into 1/4 inch thick
2 tablespoons of anise wine
2 tablespoon of annatto water
2 tablespoon of salt cooking oil
4 tablespoon of sugar
1/8 teaspoon of salitre ( saltpeter )

Procedure:
Combine all the ingredients in a shallow pan except for the pork.

Sprinkle the mixture onto the pork and make sure that it is distributed evenly.

Pile the pork inside a container with a cover and keep refrigerated for about 3 days to cure the pork.

To cook, just put a little water in a skillet and add the pork and fry it until done.
