Pinakbet or Pakbet, a traditional Filipino vegetable recipe for day to day food. It is a simple recipe that loves by every Filipino. I consider it as a traditional recipe as the vegetable that usually use here are mentioned on Filipino folk song "Bahay Kubo". Bahay kubo is all about a typical Filipino life living in a nipa hut surrounded by vegetable plants that are commonly found in rural areas. It has become so popular among the average Filipino for the reason that it is so affordable and the ingredient are always available in every market throughout the country. The procedure for cooking is so simple that everybody will never have difficulty for learning the cooking process. Everybody loves to cook the recipe as I always seen in TV different variation for cooking Pinakbet. Pinakbet is consider as a tagalog Filipino recipe but Ilocos province are also known for cooking their variation which I found a very good one, they use Bagnet (Crispy Fried Pork) when sautéing the food that enhance the flavor, another reason for their delicious pinakbet are they uses newly harvest vegetable that makes their recipe much delicious. Pinakbet was usually served with fried fish as a side dish, we also include leftover fried or grill fish to recycle the food. If you want to try a traditional Filipino vegetable recipe, here's how I cook pinakbet.
Ingredient for Cooking Pinakbet: 100 gram talong (eggplant), cut diagonally 100 gram okra, halves 100 gram of calabasa (squash), cut into square (serving size) Saluyot leaves (jute leaves) 1 whole ampalaya (bitter melon), slice 1 bundle of sigarilyas (wing bean), cut into halves 1 pcs of sweet potato (kamote), squared 250 gram of liempo pork, cut into small cube 1 bundle calabasa sprout 3-4 minced garlic 1 whole onion 1 tomato, quartered ½ cup of bagoong na alamang (shrimp) Left over fried or grilled fish (optional) Salt if needed Vetsin 2-3 cups of water Cooking oil

Pinakbet Direction for Cooking: Wash pork meat and vegetable mention above, set aside. In a pan, bring to boil pork in 2 cups of water, let the water dry until pork fat start to secrete its own oil. Remove meat in the pan, add cooking if needed to sauté garlic, onion, and tomato. Add shrimp paste, cook liempo and simmer for few minute while mixing from time to time. Add vegetable excluding saluyot and calabasa sprout, add 2-3 cups of water and left over fish, simmer for few minute until vegetable tenderize, add vetsin, salt if needed, saluyot, and calabasa blossom (sprout). Served pinakbet while it is hot along with steam white rice, enjoy.
