Grilled Pinakbet Recipe by Yummy Ph - Filipino Free Recipes


Serve this with Filipino dishes slike grilled or fried fish, grilled pork belly, crispy pata, or lechon kawali.

Serves 5  Prep Time 30 minutes  Cooking Time 15 minutes

For the dressing
1 cup vinegar (sukang Iloko)
1/4 cup vegetable oil
3 tablespoons sugar

1 bitter gourd (ampalaya)
1/2 cup vinegar
1 cup yard-long beans (sitaw)
200 grams squash, peeled
4 pieces okra
2 medium eggplant
salt and pepper to season
2 cups fresh alugbati leaves
2 to 3 teaspoons fish paste (bagoong)
1 cup tomato slices for garnish
1 cup crushed pork crackling (chicharon) for garnish


1  Make the dressing: In a bowl, whisk together sukang Iloko, vegetable oil, and sugar; set aside.

2  Slice ampalaya in half then sprinkle with salt. Cut into half moons; squeeze. Wash, drain, then soak in a bowl with vinegar; set aside. Slice into bite-sized pieces sita, squash, okra, and eggplant; season with salt and pepper. Grill over medium hot charcoal until vegetables are tender.

3  To assemble, arrange alugbati leaves on a serving bowl. Arrange grilled vegetables and ampalaya on top. Pour dressing. Top with bagoong. Garnish with tomato slices and chicharon.
