Chicken Adobo with pineapple by Vegan Pinoy

2 pcs mock chicken or any vegetarian meat, cut into big cubes
2 potatoes, chopped to ½ to 1 inch pieces
3 carrots, chopped to 1/2 inch pieces
1 cup pineapple chunks
5 cloves garlic, crushed
¼ cup vinegar (I used apple cider vinegar)
½ cup soy sauce
2 Tbsp brown sugar
3 pcs bay leaf
2 Tbsp peppercorns, crushed
2 Tbsp vegetable oil

Fry the mock meat until brown. Set aside.
Sauté garlic in a pot until fragrant. Add potatoes and carrots and sauté for about 1 minute and add ¼ cup of water. Add soy sauce, vinegar, bay leaves and black pepper to pot. Stir well. Cover pot and bring to a boil. Lower to medium-low heat and simmer for 25 minutes or until vegetables are tender.
Add mock meat and pineapple chunks. Then simmer for some minutes.
Garnish with bay leaves
Serve with steam rice.
