Chicken Adobo With Pineapple by Cooks dot Com


3 lb. chicken cut up
1 tsp. salt
1 sm. bay leaf
1/4 c. water
1 med. tomato, quartered
1/2 c. vinegar
1/2 tsp. pepper
3 cloves garlic, minced
1 c. drained pineapple tidbits

Instruction:
Place first 7 ingredients in a pot and simmer covered for 60 minutes or until chicken is tender. Add tomato and pineapples and cook uncovered until liquid is reduced to half.
