Chicken Adobo With Pineapple by Cook Eat Share


3 pound chicken cut up
1 teaspoon salt
1 sm. bay leaf
1/4 c. water
1 med. tomato, quartered
1/2 c. vinegar
1/2 teaspoon pepper
3 cloves garlic, chopped
1 c. liquid removed pineapple tidbits

Directions
Place first 7 ingredients in a pot and simmer covered for 60 min or possibly till chicken is tender. Add in tomato and pineapples and cook uncovered till liquid is reduced to half.
