Name Beef Adobo in Coco Milk
1 k. beef (cut in 2" cubes)
1/2 cup vinegar
1/2 cup soy sauce
1 pc. bay leaf
10 pcs. peppercorns, crushed
2 cloves garlic, minced
1 small ginger (cut into strips)
1 cup coconut milk (first extraction)
2 pcs. hot pepper
Combine all ingredients except for the coconut milk.
Place in a saucepan and cook for 20 minutes.
Bring to a boil.
Lower heat and simmer for an hour or until meat is tender.
Add coconut milk, stir to prevent curdling; simmer for another five minutes.
Correct seasoning and sauce.
