Japanese Beef Stew
When upset i think of things to cook. I love cooking stews. Simple uncomplicated with minimal cooking aparatus needed - easy washing up. So instead of traditional French beef stew or Chinese braised beef, i decided to clear up the left over bits and pieces of Japanese groceries languishing in the fridge.

750 gm Beef Chuck, cut into 1/2 inch cubes
3 tbsp Olive Oil
2 tbsp Miso Paste
100 ml Sake (or however much or little you have, if not substitute with choice alcohol or skip)
20 ml Mirin
1 bunch Spring onions, trim & wash white part for cooking. Reserve green bits for garnishing.
1.5 tbsp Brown Sugar
4 tbsp Soya Sauce
Stock or Water
potatoes, baby carrots & turnip.

Marinate beef in the mirin & soya sauce for about 30 mins. Heat olive oil in stew pot & sear beef. Dish up beef & set aside.
Fry the white bits of spring onion till fragrant. Add miso paste, stock/ water and sake till meat is just covered with liquid. Mix well. Bring to boil & add vegetables. Lower heat till a slow simmer. Cook for 45 mins then remove cover for a further 7 to 10 mins to thicken sauce.
