SWEET AND SOUR BEEF AND CABBAGE STEW

Yields: 8 servings
3 tablespoons canola oil
4 pieces large beef shanks, about 3 pounds
1 large yellow onion, peeled and diced
1 large canned crushed tomatoes, 14.5 oz
1 packet Asian Home Gourmet (AHG) Singapore Chicken Curry sauce
2 quarts beef stock or broth
1 large carrot, peeled and sliced
1 small cabbage, core removed and sliced thinly
1 can cannellini beans, (14.5 oz), drained
Preheat a large stock pot with the oil over high heat for about 1 minute. Add beef shanks and sear each side for about 3 minutes. Remove beef from the pot. Add onions and cook for 5 minutes. Return beef shanks to pot.
Add canned tomatoes, AHG Singapore Chicken Curry sauce, and beef stock. Cover and cook for 35 minutes or until the beef is fork tender.
Uncover and add carrots and cabbage. Cover again, adjust heat to medium and continue to cook for another 10 minutes.
Season with salt and pepper if desired. Add beans and cook for 2 minutes. Turn off stove. Serve hot.
