Taho and Sago Filipino Recipe

Ingredients:
Tofu Pudding:
1 - 3 oz. Tofu Mix Box (by House - available in Asian grocery stores)
5 cups water

Sago
1 - 8 oz. Tapioca Pearl (Sago) bag (by Tropics)
Water, as directed

Syrup:
1-1/2 c brown sugar
1-1/2 c water
3-4 drops Banana or Almond flavor extract
Instructions:
TAPIOCA PEARLS (SAGO):
Cook the tapioca pearls as directed in the bag, as follows:

1. Boil water, and drop the tapioca pearls in the boiling water. Cook for 15 minutes, constantly stirring to prevent from sticking.

2. Remove from heat and rinse in tap water several times to cool down. Soak tapioca pearls in water and refrigerate up to 12 hours or overnight.

3. Drain, and repeat step 1, but cook only for 10 minutes.

4. Remove from heat and rinse in tap water several times to cool down. Soak in water and refrigerate for 3 hours or until white parts disappear. Drain, rinse and soak in 1/2 syrup.

TOFU PUDDING:
Prepare the tofu pudding (taho) as directed in the box. IMPORTANT NOTE: When tofu is cooked, pour into a GLASS bowl and COVER WITH ALUMINUM FOIL. Do not use an aluminum or stainless steel bowl! This should be ready in 20 minutes.

SYRUP:
Mix and boil brown sugar and water. After 10 minutes of boiling, add the banana or almond flavor extract. Scoop out some syrup for soaking the tapioca pearls. Continue to boil the remaining syrup for 5 minutes. Cool down.
