Lechon Paksiw - Pinoy Food
Paksiw is a type of Pinoy food that taste sour. It is the combination of saltiness and sourness of a food. One of the most common main ingredient on cooking Paksiw is the Bisugo (Threadfin bream fish).
Pork is also a meat that can be used as main ingredient on cooking Paksiw. But this kind of Paksiw is very different to Bisugo Paksiw. This Pinoy food is more tasty and more expensive that Bisugo Paksiw. Below is the recipe of Lechon Paksiw. Like the Pinoy food Lechon, the best part of this food is the skin. Many Pinoy prefer to eat the skin than the meat.
Ingredients:
Around 1 kilo of pork lechon
1 cup lechon sauce or Mang Tomas
1 cup vinegar
1/2 cup brown sugar
1 tablespoon peppercorn or paminta
1 tablespoon salt
4 cloves garlic, crushed
1/2 cup dried oregano
1 cup of water
Procedure:
Chop lechon into small pieces. Preferably 1 inch in width.
Place in a pan then add all the ingredients wait until it boils
Simmer until the sauce thickens and the lechon skin softens
